Found this recipe on the Malibu Rum facebook page. It looks YUMMY! Think it would be 3 tbs rum for the pie and the rest for me!
The Recipe:
1 pie crust
2 eggs
1 can (15 oz.) pumpkin puree
1 can (5 oz.) condensed milk
3 tbsp Malibu Island Spiced
1 tsp ground cinnamon
1 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp ground ginger
Pinch of salt
In a standing mixer, beat pumpkin, condensed milk and eggs on a medium speed until thick and well incorporated.
Slowly add each of the spices, one at a time and finally the salt.
Pour into a pie dish lined with the pie crust.
Bake at 450F for 15 minutes.
After 15 minutes, turn the heat down to 350F (this is to avoid any cracks in the pie) and bake for another 35 minutes.
Cool, and serve with whipped cream.
